mexican lasagna

a friend of mine asked me for this recipe, so i thought i would share it here! it is pretty easy and sooooo good! hope you enjoy! credit for recipe goes to misty wright (with my adaptations in bold)... it came from the West End Community Church  "the Good to Give Cookbook". it is a collective effort of people in the church and their favorite recipes.

2-3 red peppers, chopped (1 large)
2-3 green peppers, chopped  (1 medium)
1 large onion (1 medium)
2 cans of black beans, drained
2 cans of mexican flavored stewed tomato (mild rotel), not drained
shredded cheese (about 2 or more cups)
4-5 flour tortillas (6)
tortilla chips and sour cream

saute peppers and onion on medium high until soft. add beans and cook about 5 minutes. add tomatoes and cook another 5 minutes. remove from heat. place a layer of (2) tortillas in 9x13 baking dish and sprinkle with cheese. scoop out about a third of bean mixture and put cheese on top. layer two more times and end with cheese on top. bake at 350˚ for about 15-20 minutes. serve with chips and sour cream!
